Beltane Oatcakes1 cup rolled oats coarsely ground in food processor 1½ cups all purpose flour 1 cup (2 sticks) unsalted butter 1 tsp. salt ¾ cup + 2 Tbsp. brown sugar 1 tsp. vanilla extract (optional) ½ tsp. baking soda
Preheat oven to 300° degree F. Lightly grease two 9 inch round cake pans. Cream together butter, salt, brown sugar and vanilla. Beat in the flour, baking soda and oats. Divide dough in half and press into prepared pans, smoothing the top with your fingers. Prick the dough with a fork.
Bake cakes for about 35-40 minutes until golden brown around the edges. Remove from oven and loosen edges with a knife. Leave to cool for 5 minutes, then carefully turn the cakes out all in one piece. Cut into wedges each while cakes are warm. (If you wait until the cakes cool, they will be difficult to slice.)
